The coolest place I’ve ever been. Wow, that’s a real challenge for me to answer. I’ve been to lots of incredible places that were cool for various different reasons. Here’s just a few:

  • Tanzania: I spent 2 weeks in Tanzania a couple summers ago with one of my best friends, Shaheen. Shaheen was born and raised in Dar es Salaam and it was incredibly cool to explore her hometown with her as my personal guide. Bonus points for the weekend excursion to a local animal park in the family car.

  • British Virgin Islands: I think sailing may be the perfect getaway and the British Virgin Islands are gorgeous. Our days were filled with exploring new islands, playing cards, cooking, dancing on the deck, reading, drinking Presidente and sunning. It’s impossible to get bored.

  • Portugal: I road tripped around the entire country last summer and was surprised by the variety of terrains and climates. Highlights were the tiered vineyards of the Douro, the wild peaks of Serra de Estrela and the nearly deserted beaches of the south . We encountered very few tourists during our trip so it really felt like we had the country to ourselves.

  • Israel: This makes the list because it completely defied my expectations. I had imagined it to be very cloistered but it was Mediterranean, sexy and magical. Plus, I ate some of the best food I’ve had all year. It’s an incredibly fragile place but I only felt that for brief moments during my stay.

  • India: I went to Delhi for work and I have never felt so far from home. I was both incredibly overwhelmed and incredibly amazed at various points during the trip. I’d definitely like to go back and explore more of India.

Oh, but there’s also Croatia and China and Colombia and Austria and New Mexico and Grenada and so many more! I think the bottom line is that being lucky enough to travel is the coolest.

I freestyled a mixed berry cobbler earlier this week. My taste tester (aka ZK) said it was excellent so I’m feeling pretty proud.
Mixed Berry CobblerServes 6Ingredients:
Pastry
1 1/2 cup flour
1/4 cup sugar
1/2 teaspoon salt
6 tablespoons butter
3 tablespoons shortening
3 tablespoons cold water
1 egg white
Filling
2 cups blackberries
2 cups raspberries
2 cups blueberries
1/4 flour
1 cup sugar
2 tablespoons cornstarch
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3 tablespoons melted butter
Instructions:
Place the flour, sugar, salt, butter and shortening in a food processor with a steel blade. Pulse a couple times until the mixture is like cornmeal.  Add the cold water and pulse just enough to mix it into the other ingredients. 
Place the mixture into a bowl (it will still be crumbly at this point) and knead it until it just starts to hold together. Refrigerate the dough for at least one hour.
Preheat oven to 475º. 
Combine the blackberries, raspberries, blueberries, flour, sugar, cornstarch, cinnamon and nutmeg in a large bowl. Stir mixture until you can see the color of the berries then add the melted butter.
Remove the dough from the fridge and roll it out to the approximate shape of your dish (I used a cast iron dish).
Butter the dish and spoon in the fruit  mixture. Lay the pastry sheet over the fruit. Brush the pastry with egg white and sprinkle a bit of nutmeg, cinnamon, and sugar over the top.
Bake for 30 - 45 minutes until the pastry is golden brown and the fruit is bubbling. 
Remove cobbler from oven and allow to cool for 10 minutes. Serve with a scoop of vanilla ice cream.
