I became interested in Chicago restaurant Alinea after reading a New Yorker profile of chef Grant Achatz. Turns out there’s an Alinea cookbook. While the book looks beautiful - if a little impossible to execute on - I’ve been skimming the videos and recipes online for free at Alinea Mosaic. The vid on texture is my fav thus far.
